Bacon and Kale Frittatas

There's nothing better than starting the week, with a fridge packed with healthy foods! I especially love having meals or food items prepped and ready to go. This helps me to stay on track and saves me a TON of time in the kitchen. One of my favorite grab and go breakfasts or snacks are mini frittatas. Simple to throw together and an awesome protein packed meal. I currently have these Bacon and Kale Frittatas packed into containers along with some sautéed greens for easy breakfasts. Delicious and bonus that my kids love them too!

Bacon and Kale Frittatas

5 strips cooked turkey bacon

1 bunch of kale, chopped

1/2 tbsp. coconut oil

1 cup cubed and cooked butternut squash or sweet potatoes

4 whole eggs

8 egg whites

1 tsp. Italian seasoning

1 tsp. sea salt

1 tsp. pepper

 
 

1.Pre-heat oven to 375 degrees.

2. Chop cooked bacon and set aside.

3. Heat coconut oil in a pan over medium heat.

4. Sauté Kale until wilted.

5. Add cooked, butternut squash and bacon to kale.

6. Mix well. Spoon mixture into silicone muffin cups or lightly greased muffin tins.

7. In a large bowl, whisk together eggs, Italian seasoning, sea salt and pepper.Pour egg mixture over bacon mixture filling just over 1/2 way full.

8. Bake for 40-45 minutes or until center is firm.

9. Store in an airtight container and enjoy throughout the week!
