Balsamic Roasted Brussel Sprouts

True story, I HATED brussel sprouts when I was a kid. I would peel off each leaf and choke them down with milk so I didn't have to taste them. As an adult, I thought I didn't like them. That was until I had them roasted. As a kid my mom always steamed them. Blah! No wonder I didn't love them!!!!

 

Now, I make them almost weekly and have to fight my kids over them. Which is okay with me because they are super duper healthy for us all. They are loaded with fiber, vitamin C, folate and antioxidants so a great food to include in our diets!

Balsamic Roasted Brussel Sprouts

4 cups of brussel sprouts washed and cut in half

3 tbsp. ghee (or olive oil)

1 tsp. sodium free vegetable seasoning

2 tbsp. balsamic vinegar

sea salt and pepper

 

Pre-heat oven to 400 degrees. Wash, rinse and cut brussels in half and put into a medium bowl. Melt ghee and drizzle over sprouts. Season with vegetable seasonings, sea salt and pepper. Spread brussels onto a baking sheet. Roast for 35-45 minutes stirring every 15 minutes. For the last 10 minutes, drizzle balsamic over brussels, stir and continue roasting. Cool slightly and enjoy!
