Butternut Squash Breakfast Bowl

If you're like me and you're loving all the winter squash right now, this breakfast bowl is for you! A different take on breakfast but a yummy one that's packed with a nutrient punch!

Butternut squash, cinnamon, and greek yogurt all have some awesome health benefits.

 

Let's start with the star, butternut squash. This winter vegetable is loaded with fiber (7g in 1 cup) is high in immune boosting vitamin C, contains antioxidants which helps reduce inflammation and is low in fat but high in carbs so excellent for weight loss.

 

Now let's talk cinnamon. Like butternut squash, cinnamon is high in antioxidants. It's also been linked to reduced risk of heart disease and aids in lowering bad cholesterol, LDL.

 

Last greek yogurt which is an excellent source of protein. It's also packed with probiotics which we know are important for maintaining a healthy gut. Greek yogurt is also a great source of calcium, B12 and potassium.

 
 

Butternut Squash Breakfast Bowl

 

1 cup roasted butternut squash

1 cup non-fat greek yogurt

1-2 tsp. cinnamon

2 tbsp. coconut sugar

1 tbsp. almond butter

 

Roast butternut squash in the oven at 425 degrees for 30 minutes. Toss with coconut sugar and cinnamon. Scoop 1 cup greek yogurt into a bowl then top with roasted butternut squash, almond butter and a sprinkle of cinnamon. Enjoy!
