Chocolate Peppermint Fudge

Holiday baking is one of my favorite past times. It starts way back when I was a toddler, stirring, pouring and mixing up cookies with my mom and grandma. The tradition continued each year with baking being something we did to share with others this time of year. It continues for me annually and I now enjoy sharing the tradition with my kids.

 

With that said, we are also gifted a TON of holiday treats from others. So on top of what we bake, we end up with our kitchen looking like a sweet shop. Which is delicious and all but can be dangerous for the waist line if you know what I mean ;-) Which is why I try to keep a few "healthier" treats on hand to keep things balanced. I recently picked up an adorable Christmas Tree silicone pan and knew exactly what I wanted to make.

 

Chocolate Peppermint Fudge

Ingredients

1/4 cup coconut butter

1/2 cup sunflower seed butter

1/4 cup dark chocolate chips

2 tbsp. coconut oil

2 Scoops Chocolate protein powder

1/2 tsp. peppermint oil

1 crushed candy cane

 

Directions -

In a small saucepan over low, melt coconut oil, coconut butter, sunflower seed butter and chocolate chips while stirring. Once smooth and creamy, remove from heat and add in peppermint extract and protein powder. Whisk until well combined. Pour into silicone molds or a parchment lined 8x8 baking dish. Top with crushed candy canes and chill in the freezer until firm. Pop out of molds or cut with a warm knife. Store in an airtight container in the freezer for up to two weeks. Enjoy!
