Healthy Super Bowl Snack

It's almost Super Bowl Sunday! Are you a fan of the game? The commercials? Or the food? I'll be honest, I'm in it for the commercials, the conversation and the food :-) Speaking of the food, how about a few healthy recipes for the big day? First, here's the thing... Super Bowl Sunday tends to revolve around football and food. Which is great but being around food all day (typically un-healthy food at that) can lead to binging, overeating, then feeling sick, guilty and lethargic the next day. BUT, it doesn't have to be that way! One way to keep from going overboard and regretting your food choices, is to balance the menu with some healthy and unhealthy options.

 

Here's a few yummy options that taste great and are on the healthier side.

Bean-Free Avocado "Hummus"

Ingredients

1 large zucchini

1 small avocado

1 clove of garlic

2 tbsp. tahini

1 tsp. cumin

1/2 tsp. paprika

1/4 cup fresh cilantro

2 tbsp. avocado oil (olive oil works well too)

salt and pepper to taste

Squeeze of lime juice (optional)

 

Instructions

Place all ingredients except oil into a food processor. Pulse until finely chopped.Continue pulsing and slowly add in oil until the mixture is smooth and creamy. Serve with fresh veggies or desired dippers!

 

Sugar-free Margaritas

Ingredients

1 shot Blanco Tequila

Juice from 1 lime

Juice from 1 small orange or half a larger one

Club soda or sparkling mineral water

 

Instructions 

In a shaker, mix together the tequila, lime juice and orange juice. Strain into a glass with ice and top with club soda or sparkling mineral water. Enjoy!

 
 

Pesto Deviled Eggs

Ingredients

1 dozen boiled eggs

1/4 cup dairy-free pesto

2 tbsp. non-fat greek yogurt

juice from 1/2 lemon

salt and pepper to taste

basil for garnishing

 

Instructions

Steam or boil your eggs then peel and chill before handling. Once chilled, peel, slice and pop the egg yolks into a mixing bowl. Add the pesto and greek yogurt to the egg yolks then mash and stir until well combined. You can also do this step in a food processor. Scoop into a small zip lock bag then cut a hole in the end of the bag. Squeeze the yolk mixture out through the whole into each egg white. Garnish with chopped basil and enjoy!

 

Just remember, the day does not need to revolve around the food and what you eat is 100% your choice! If you want to eat cookies, buffalo chicken dip, ribs, hot wings, etc. do it but don't beat yourself up for your choices. Choose to eat what is going to make you happy and feel good. Balance the day with some healthy foods and be sure to drink lots of water!
