The BEST Banana Protein Muffins

If you're looking for the BEST muffin recipe look no further!

I've been perfecting this recipe for the past few months and my family has been LOVING getting to sample these muffins.

They are gluten-free, packed with protein, low fat, super moist and taste amazing!!!!

The BEST Banana Protein Muffins

Makes 15-16 muffins

  • 4 medium bananas, ripe (the riper the sweeter your muffins will be)
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil (can also use butter)
  • 2 tbsp. flax milk + protein (or milk of choice)
  • 1 tsp. vanilla extract
  • 2 cups Bobs Red Mill Gluten Free flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 scoops vanilla protein powder
  • 1/3 cup unsweetened coconut flakes
  • 1/2 cup chocolate chips

Directions - 

Pre-heat oven to 350 degrees.  Lightly coat silicone muffin molds with cooking spray. In a stand mixer or by hand, mash bananas. Add to eggs, milk, vanilla and maple syrup to bananas and mix well.  Melt coconut oil but do not overheat.  Add coconut oil to banana mixture and combine well.  In a separate bowl, combine all dry ingredients except chocolate chips.  Add dry mixture to banana mixture and mix well.  Fold in chocolate chips with a spatula or wooden spoon.  Scoop 1/4 cup of mixture into silicone muffin molds and bake for 30 minutes or until golden brown.
